If you’re craving something comforting, packed with flavor, and with macros that are on point, this brothy Hainanese Chicken Rice recipe is perfect for a quick weeknight dinner.
Brothy rice is one of my favorite ways to whip up a soup-adjacent dish really quickly. You just take whatever rice you have kicking around in your pantry (or even better, leftover from dinner the night before), pour broth around it, and top with some protein & whatever else you want to use up from your fridge.
Instead of poaching an entire chicken like you would for a more traditional version, here we’ll gently simmer chicken breasts along with some aromatics to yield a flavorful broth along with super juicy & tender chicken in just a few minutes.

*This recipe was developed for an Instagram collaboration I did with a rice company, so you’ll see me use their instant rice in the video below. The recipe is just as good with either fresh cooked or leftover rice.
Brothy Hainanese Chicken Rice Soup
Servings: 4
Ingredients
4 8oz chicken breasts (900g)
4 cups chicken broth or water, plus additional as needed (945ml)*See Note
1 small piece of ginger, sliced
4 garlic cloves, sliced
1 bunch scallion greens, whites and greens separated and chopped
4 cups cooked rice (800g) (if cooking fresh rice, start the rice before the recipe below)
Sauces for serving (I like to use a little chili crisp or flakes but sriracha is great too).
Additional salt to taste if needed.
