Hey gang!
Today I’m dropping the forth installment in my lunch box series and it’s an absolute banger.
Flank steak gets seared up and then tossed in a killer chipotle marinade before being served over sautéed “fajita” veggies and some high-protein rice. It comes together super quickly and it’s pretty much what I consider to be the quintessential summertime meal.
I’ve written the recipe to be done on a stove top to keep it as accessible as possible but grilling everything is not only super delicious but is actually way quicker as well.

Carne Asada Lunch Boxes
Servings: 6 lunch boxes
High Protein Rice Ingredients:
1 1/2 cups rice (270g) (I use jasmine)
2 2/3 cups unsalted chicken bone broth (630g)
Steak Ingredients:
3 lbs flank steak (1360g)
2 tsp diamond crystal kosher salt (6g)
3 one-second sprays of cooking oil (3-4g)
1 7oz can chipotles in adobo sauce (200g)* see note if you don’t like spicy food
1 tbsp honey (20g)
1 lime, zest & juice
Water as needed to thin
1 bunch cilantro, minced
1/2 red onion, minced & soaked in water
Fajita Veggies Ingredients:
3/4 lb red onions, sliced (2 medium onions) (340g)
3/4 lb poblano peppers, sliced (4-6 peppers depending on size) (340g)
3/4 lb red bell peppers, sliced (2 peppers depending on size) (340g)
1.5 tbsp neutral oil, plus additional as needed (19g)
1.5 tsp diamond crystal kosher salt (4g)
3 tbsp dried oregano (4g)
Water or chicken bone broth to deglaze
Instructions:
Cook the rice.
Add rice and bone broth to a rice cooker or cook on the stovetop according to package directions.
