Hey gang!

Today I’m dropping the forth installment in my lunch box series and it’s an absolute banger.

Flank steak gets seared up and then tossed in a killer chipotle marinade before being served over sautéed “fajita” veggies and some high-protein rice. It comes together super quickly and it’s pretty much what I consider to be the quintessential summertime meal.

I’ve written the recipe to be done on a stove top to keep it as accessible as possible but grilling everything is not only super delicious but is actually way quicker as well.

If you head over to the recipe notes section I’ve got a few hot tips on why I like to marinate my steak after I cook it, the keys to getting perfect restaurant-style “fajita” veggies that aren’t soggy at home, and how to make a similar recipe if you don’t like spicy food.

There’s also a shopping list at the bottom of this post for ya.

Cheers!
