This week’s meal prep salad is the next installment in my chicken salad series & is a little taste of summer for the cold winter months. It’s loaded with tons of goodies like pan-seared chicken breast, charred corn, poblano peppers, black beans, cotija cheese, and all tossed in a high-protein, smoky, creamy chipotle dressing.

Charred Chipotle-Lime Chicken Salad
Servings: 4 large dinner portions, 8 small side portions
Store in an airtight container and use within 5-7 days.
Salad Ingredients:
2 lbs chicken breast, seared (900g)
2 tsp neutral oil (10ml)
1 16 oz can of corn (450g)
1 16 oz can black beans (450g)
2 poblano peppers
1 red bell pepper
1 bunch scallions, greens only
1/2 bunch cilantro, minced
1/4 cup cotija cheese (25g)
High Protein Creamy Chipotle Dressing, to taste (recipe below)
Chili flakes to taste, optional (I prefer gochugaru for this recipe)
