Charred Spring Snap Pea Salad & Steak
SPRING IS FINALLY HERE and this is the salad I make every year to celebrate.
Hey gang!
The dark, oppressive force that is winter in NYC has finally dissipated and I couldn’t be more stoked to see all of the gorgeous produce starting to roll into my farmers market this time of year (or more importantly, to not have to end every day at 4:00 in the afternoon because the sun has already set).
Every year when I snatch up the first snap peas I see at the market and then make some variation on a charred snap pea salad, it feels like the official start of the warm weather season.
Typically I just make a HUGE batch of this salad, toss it in a quart container, and eat it standing in front of the fridge in my underwear throughout the week… but in the recipe here I gave you a complete meal with rice and steak.
I’ve given you two different salad dressings to choose from but I’d highly encourage you to experiment with what you have on hand to whip up a fun dressing yourself.
