Hey gang!
If you want to make the best baked salmon of your life, the trick is NOT to bake it, but to broil it instead.
You whip up a marinade, toss the salmon in it, and then place it under the broiler for a few minutes. After that you turn the oven off completely but KEEP THAT OVEN DOOR SHUT.
By doing this, you'll get a perfect charred exterior from the broiling step and then the residual heat in the oven will then cook the center of the salmon to a perfect, flaky doneness.
I gave a recipe for a citrusy miso marinade below (which is fire) but I really only developed it to show you the technique. I encourage you to use your favorite marinade—just make sure it has some sugar in it to help caramelize in the oven.
