Fall is here which means it’s officially time for me to bust out the shredded Brussels sprouts for this week’s veggie & protein packed meal prep salad.
This one is absolutely loaded with bell peppers, black beans, Monterey jack cheese, and all tossed in a creamy, high-protein honey-chipotle dressing.

Creamy Chipotle Brussels Sprout Salad
Servings: 4 LARGE dinner portions, 8 small side portions
Store in an airtight container and use within 5-7 days.
Ingredients
1 16 oz can black beans, drained & rinsed (400g after draining)
4 PACKED cups shredded Brussels Sprouts (350g)
1/4 red onion, finely minced *See note
1/4 - 1 jalapeño pepper, finely minced (add to your taste)
1 red bell pepper, diced
6 oz Monterey jack cheese, diced
1/2 bunch cilantro, minced (optional)
High protein honey-chipotle dressing to taste (recipe below)
Additional salt & lime juice to taste.
