Hey gang!
I’m a firm believer that delicious food doesn’t have to fill your sink with dishes or take forever to cook and if this installment of Homemade-ish doesn’t prove that to you, I don’t know what will.
Crispy chicken, a creamy flavor-packed dressing, zippy lemon zest and pepper to keep your tastebuds moving, and it’s on your table in minutes with only an air fry basket, knife, and mixing bowl to clean (plus a couple utensils to chuck in your dishwasher).
Macros and a low-calorie version are at the bottom of this post.
Crispy Lemon-Pepper Chicken Caesar Wraps
Makes 2 large wraps
Ingredients
16 oz frozen chicken of your choice ( I use these) (450g)
1 head Romain Lettuce head, chopped
1 large Tomato, diced (optional)
1/2 cup Zhuzhed Caesar Dressing (125ml)
1/4 cup Parmesan Cheese (I like to peel it into long pieces)
Black pepper & additional lemon zest to taste (add a ton of black pepper)
2 XL Burrito Tortillas
Zhuzhed Caesar Dressing
1/2 cup Caesar Dressing of your choice (125ml)
2 Anchovies
Zest from 1 lemon
1 tsp Ground Black Pepper, plus additional to to taste (5ml)
* I like my dressing FUNKY and PACKED with flavor, dial it back if you’re not an anchovy fan.
Instructions:
Place Chicken in your air fryer (or preheated oven) and cook according to package instructions.
While that cooks, mix the 1/2 cup store bought Caesar dressing with 2 Anchovies, zest from 1 lemon, and 1 tsp Ground Black Pepper. Use a fork to mash the anchovies into the dressing.
When Chicken is done, allow it to cool slightly before chopping it into chunks.
Add your Chicken along with the half of the Romaine Lettuce, Tomatoes, and Parmesan Cheese into your salad dressing and mix thoroughly to combine. Add more lettuce, black pepper, lemon zest, and parmesan to suit your taste.
Add to your Burrito Tortilla and roll into a wrap.
