Food Court Style Teriyaki Chicken
For when you're craving some Panda Express but want to be nice to your body.

This week I’m sharing a better-for-you version of one of my all-time favorite cheat meals, mall food court Teriyaki Chicken.
As a kid from the suburbs I spent an ungodly amount of time running around the mall with my friends sneaking into the adult section at Spencer’s, shopping at Hot Topic & Pac Sun, and just being an all-around headache for the mall cops.
My favorite part of the night was getting a double portion of teriyaki chicken from the food court and I still like to swing by Panda Express every now and again when I feel like a little treat.
Here’s the recipe for my version I like to whip up when I’m feeling nostalgic but want to keep the calories in check.

Food Court Style Teriyaki Chicken
Servings: 4 large servings of chicken
Ingredients:
2 lbs boneless, skinless chicken thighs (900g)
1/2 cup light soy sauce (80ml)
2 tbsp water (30ml)
1 tbsp neutral oil (15ml)
Zest from 1 large Orange, juice from half.
6 minced garlic cloves
1 inch piece ginger, grated (2.5cm)
2 tbsp brown sugar (25g)
2 tbsp honey (40g)
