Mediterranean Seared Chicken + Macro/Meal Prep Friendly Caesar Salad

This is the third installment in my lunch box series, Herby Chicken Thighs with a high protein Kale & Radicchio Bean Salad.
This is probably my favorite lunch recipe I’ve come up so far. It takes the flavors of a classic chicken caesar salad and ramps them up a notch; all while making the salad meal prep-able thanks to the hearty greens that can hold up to being dressed all week.
You can totally just use your favorite store-bought caesar salad dressing for this if you want to cut down on prep time but I’ve included a high-protein dressing recipe for ya in this post.

Herby Chicken Thighs w/ Kale & Radicchio Caesar Salad Lunch Box
Servings: 5 lunch boxes
Store in an airtight container and use within 5 days.
Chicken Thighs:
2 lbs chicken thighs (900g) (I used boneless skin-on but skin-off is great too)
2 tbsp olive oil (26g)
1 lemon, zested & juiced
3 tbsp herbs de provence (or sub dried parsley/herb of your choice) (8g)
2 tsp diamond crystal kosher salt (6g)
Black pepper, to taste
Kale & White Bean Caesar Salad:
2 16 oz cans white beans, drained & rinsed (400g after draining)
1 bunch tuscan kale, deveined & roughly chopped
1/2 small head radicchio, roughly chopped
1/4 red onion, finely minced
1/4 cup shaved Parmesan cheese (115g) (My favorite vegan parmesan)
High Protein Caesar Dressing, to taste (You’ll probably use 3/4)
Additional salt, pepper, and Parmesan to taste
