Hey gang!
This week I’ve got an absolutely killer halloumi meal prep pantry salad for you that’s perfect for when you want to make something healthy for the week, but you don’t feel like cutting a bunch of veg.
It really doesn’t get much easier than this; open a couple jars, sear off the halloumi, and toss everything together. Hell, it doesn’t even need a dressing because the jarred ingredients pack so much flavor & seasoning into the salad.
Admittedly in the video you will see me add some fresh parsley to the bowl that I chopped off camera but that was purely to make it look a little nicer to get views over on the other social platforms. When I’m making this for myself, you can bet I’m leaning into the lazy prep and leaving that out.
While there’s a full recipe of what I used to make this salad below, I’d encourage you to add/swap-in whatever jars of random crap you have kicking around your pantry to clean it out. Sun-dried tomatoes, capers, artichoke hearts, other bean varieties, and tons of other stuff would be great here.

Lazy Mediterranean Halloumi Meal Prep Pantry Salad
Servings: 5 large dinner-sized portions
Store in an airtight container and use within 5-7 days
Ingredients:
1lb halloumi or paneer cheese (454g)
1 second spray cooking oil (3g)
2 15oz can garbanzo beans (two 425g cans)
1 16 oz jar chopped roasted red peppers (1 454g jar)
