Super Simple Salmon + Crisp, Refreshing Snap Pea Salad

This is the second installment in my lunch box series, Roasted Miso Salmon with Sesame Snap Pea Salad.
It’s a perfect example of what I designed this series for; a high protein, veggie packed dish you can feel good about eating. It’s super simple to cook but is still exciting to eat and is makes for an absolute flavor bomb of an office lunch.
Salmon is a pretty calorie dense fish (475 cal per 8oz) so if you’re on a more restrictive calorie diet I’d recommend swapping in cod (180 cal per 8 oz).

Miso Salmon & Sesame Snap Pea Salad Lunch Box
Servings: 5 lunch boxes
Store in an airtight container and use within 5 days.
Salmon Ingredients:
5 8 oz salmon filets (900g)
1/4 cup miso paste (preferably white miso) (60g)
2 tbsp brown sugar (22g)
1 tbsp honey or agave (19g)
3 tbsp Sake (45g)
2 tbsp light soy sauce or gf tamari (30g)
2 limes, zested & juiced
Water as needed to thin
1 second spray cooking oil (1g)
Sesame Snap Pea Salad:
2lb sugar snap peas (900g)
2 15 oz cans white beans, drained & rinsed
1/4 cup miso paste (preferably white miso) 60g
3 tbsp olive oil (38g)
1 large lemon, zested and juiced
1 minced garlic clove
Water as needed to thin
1 bunch mint, rough chopped (about 1 packed cup)
1 tbsp sesame seeds (I like mixing white & black) (8g)
Additional salt if needed
