I drop one of these super simple, healthy, prep-able marinated salad recipes every single week and this week’s is a nutty, mildly spicy, flavor packed soba noodle salad with a ginger peanut dressing.
This one isn’t as high in protein as usual, if you want to bulk it up fold 1 block of extra firm tofu, pressed & crumbled.

Peanut Soba Noodle Salad
Servings: 4 LARGE dinner portions, 8 small side portions
Ingredients
1/2 package Soba Noodles, 135g
1/4 small Red Cabbage, 200g
2 Carrots, 175g
1 Red Bell Pepper, 150g
1 Large Cucumber, 125g
1 12 oz bag Edamame, 340g
Additional Salt, lime juice, peanuts, chili flakes, and sesame seeds (optional/to taste).
Instructions:
Chop all ingredients according to the video instructions and toss with Creamy Orange-Mint Dressing (slowly add dressing to taste, you may not need the full batch).
Peanut-Ginger Dressing
1/2 cup peanut butter, 125g
5 tbsp light soy sauce, 75g, 75ml
1/4 cup honey/vegan sweetener, 85g, 60ml
3 tbsp Sriracha, 50g, 45ml
1 Garlic Clove, minced 3g
1/2 tbsp grated ginger, 5g
Juice from 1 lime, 40g, 40ml
Water to thin as needed.
Combine all of your ingredients and whisk until combined. Add water until viscosity matches the recipe video.
