Hey gang!

These protein-packed Smoky Chorizo Butter Beans come together in under 30 minutes and are the next installment in my Weeknight Bites series.

In this recipe, I make my own turkey chorizo using a handful of spices to keep the calorie count down. However if you’re not being super strict with calories, I recommend substituting store-bought pork chorizo, which is a bit tastier with all of that extra fat (plus it requires less ingredients to whip up the dish).

Smoky Chorizo Butter Beans

Yields: 4 Large Servings

Chorizo Butter Beans Ingredients
1 lb chorizo (store-bought or turkey chorizo, recipe below) (453g)
1 tbsp oil (15ml)
1 large white onion, chopped
4 garlic cloves, minced
3 (15oz) cans of butter beans, drained & rinsed (3 x 425g cans)
1 (12oz) can pureed tomatoes (340g)
1/2 jar Mina harissa sauce (or sub with 1 minced roasted red pepper)
1.5 cups unsalted chicken broth, plus additional as needed (355ml)
Juice from 1 lime
3-4 large handfuls of fresh spinach
Salt to taste

Cilantro-Lime Sauce (Gremolata)
1/4 cup fresh cilantro, minced (about 1/2 bunch)
Zest from 1 lime, juice from 1/2 lime
Large pinch toasted cumin seeds
Large pinch flaky salt
Olive oil to desired consistency (about 2-3 tbsp, 30-45ml)
