"SpaghettiOs" For Adults
For when you're craving some surprisingly macro-friendly nostalgic food and a fun night in the kitchen.

To those of you who don’t follow me on Instagram, I’ve been recovering from dental surgery the last few weeks & have spent my days DREAMING of what meal I wanted to have when I was finally able to eat solid food again. (I also binged all of Severance on Apple TV which was SO GOOD if you’re into sci-fi/thrillers).
I knew I wanted to cook something fun, a little over-the-top, and definitely nostalgic so I decided to make some SpaghettiOs from scratch and… they come out WAY better than I ever thought they would.
The crispy, pan-seared meatballs are super savory and are complimented really well by the herby, garlic-y tomato sauce. Plus if you swap in Italian sausage instead of the homemade Teeny Tiny Meatballs, it’s super hands off and only takes like 15-20 minutes to throw together.
One quick note if you do make the meatballs, I scale the recipe to 1 pound each of beef and pork because finding 1/2 pound at the store can be tough but you only need about half the yield. I’d recommend freezing the rest of the mixture to use another time.

"SpaghettiOs" For Adults
Servings: 4 (plus plenty of extra meatball mix for freezing)
SpaghettiO’s Ingredients
2-3 tbsp olive oil (30-45ml)
6 garlic cloves, minced
1/3 cup tomato paste (90g)
1 quart chicken stock (950ml)
1.5 cups dry anellini pasta (175g)
1/2 yield of Teeny Tiny Meatballs (recipe below) or 1 lb Italian Sausage (450g)
1 tbsp Italian herb blend
Parmesan cheese & fresh cracked black pepper, to taste
Teeny Tiny Meatballs Ingredients
2 pieces white bread, crust removed and crumbled into small pieces
1/3 cup milk (80ml)
1/2 large onion, minced or grated
4 garlic cloves, minced or grated
1/3 cup minced fresh parsley (about 18g)
2 large egg yolks
1/2 cup coarsely grated Parmesan cheese (about 40g)
1 lb ground beef (450g)
1 lb ground pork (450g)
1 tsp diamond crystal kosher salt (3g)
