Hey gang!
This is an alternate version to one of my most popular meal prep salad recipes using a few different veggies for a spring twist. I’ve also added a low calorie version of the dressing that wasn’t available in the original post!
It’s nutty, mildly spicy, packed with flavor and veggies, and all tossed in a Peanut-Ginger dressing.
Macros, a higher-protein and a lower-calorie version can be found at the bottom of this post.

Servings: 5 large dinner-sized portions
