Tomato season is slowly coming to a close, so I’ve been leaving the market with a few pounds every week and eating as many as possible before the fall. There’s only so many that I can eat in BLT’s or added to salads, so this Tomato Oil is one of my favorite ways to use up the rest before they get squishy and weird.

Yields ~3 cups oil (700ml)
Ingredients
1.5 cups of Neutral Oil per 1 pound of Tomatoes (350 ml Neutral Oil per 450g Tomatoes).
