Hey gang!
This week’s meal prep salad is loaded with spiced & roasted chickpeas, shredded Brussels sprouts, pomegranate seeds, and is tossed in a super simple but flavor PACKED creamy tahini dressing.
I love to eat this one just as a salad but it’s actually great when tossed into some pita pockets smeared with Greek yogurt along with a little seared chicken or halloumi cheese.

Za'atar Chickpea Salad with Creamy Tahini Dressing
Servings: 4 LARGE dinner portions, 8 small side portions
Store in an airtight container and use within 5-7 days.
Roasted Chickpea Ingredients:
2 16 oz cans of chickpeas, drained, rinsed, and dried thoroughly (400g after draining)
2 tbsp olive oil
2 tbsp smoked paprika
1 tbsp dried oregano
1 tsp salt
Salad Ingredients:
4 PACKED cups shredded Brussels Sprouts (350g)
Seeds from 2 small pomegranates
1 bunch mint, finely sliced (1 packed cup)
1 bunch parsley, finely sliced (1 packed up)
1/3 cup Za’atar (25g-30g) *See note
Creamy Tahini Dressing to taste (recipe below)
Additional salt & lemon juice to taste.
*Note- If you do not want to buy Za’atar, you can make imitate it by substituting 2 tbsp sesame seeds + 2 tbsp dried oregano) (20g sesame seeds, 8g oregano)
